What is Italian Confetti?
"Confetti" refers to whole almonds in a sugared shell. Confetti is the traditional favour given at family celebrations, such as baby showers, weddings, graduation, anniversary and other festivities.
There is a colour code: White for the Wedding, the First Holy Communion and Confirmation. Pink or blue for the Baptism. Green is for Engagement. Red for Graduation. Silver for 25th wedding anniversaries. Gold for 50th year of marriage.
Today, in addition to the classic sugared almond, sometimes called in the US a "Jordan almond," there is the choice of gourmet confetti, filled with high-quality Italian chocolate.
Confetti almond production is concentrated in the Abruzzo and Campania regions, and Sicily is noted for its famous Avola almonds.
Traditional Italian Wedding Cakes can be requested in variations of six basic themes.
These are: Millefeuilles, Fresh Fruit, Strawberry or Rasberry Millefeuilles, Diplomatica, Meringata and Torta Mimosa
Mille Feuilles
- puff pastry, Chantilly cream, dark chocolate drops
Fresh fruit cake
- pastry base, fresh chantilly cream topped with seasonal fresh fruit
Strawberry or Rasberry Millefeuilles
- puff pastry, Chantilly cream, fresh strawberries
Diplomatica
- pastry base, spongecake, vanilla or chantilly cream or chantilly, white ice or whipped cream topping
Meringata
- Meringue base, whipped cream and dark chocolate drops
Torta Mimosa
- Vanilla and sponge cake
